THIS WINTER, THE RITTENHOUSE NEIGHBORHOOD SAW THE OPENING OF DIG, a fast casual import from New York City (where it’s called Dig Inn). The company prides itself on working with local farms and purveyors, including Lancaster Farm Fresh Cooperative, Chiques Roc Organics, Kennett Mushrooms and Happy Valley Meat Co. All of the food is made in-house using only fresh food. There’s no freezer, microwave or can opener in Dig’s kitchen. Meals here are served in bowls and include a base of grains or greens, lean protein, hot or cold sides (mostly vegetables, plus a whole wheat mac & cheese) and a sauce. The staff can help new customers decide what to order from the many choices. Vegans, gluten-free eaters and those with other food sensitivities will find plenty of options.
