SINCE RECENTLY TAKING OVER the bar program at Royal Boucherie, Eden has quickly become known for a mixology strategy that combines bold choices with unexpected pairings. Tequila and Mezcal are not the go-to standards for matching spirits with French food, but she describes how the smokiness of a mezcal pairs with duck—and it just makes sense. She loves thinking about new flavor combinations that are out of the usual norm and she sources smaller producers or special-order spirits for the back bar. By selecting limited-availability spirits, she drives return business to the bar.

The Royal Boucherie is known as a destination French brasserie, and Eden is excited to continue to elevate its inclusive bar program in collaboration with her fellow bartenders and team. Working with seasonal produce and utilizing ingredients already in the kitchen cultivates sustainability and helps eliminate food waste. She also prioritizes spirit suppliers who exemplify sustainability— like La Gritona Reposado, an organization that is 100% women owned and operated and makes their bottles with recycled Mexican Coke bottles. Another exciting plus at Royal Boucherie: the former build-your-own-Spritz bar (conceptualized by former Beverage Manager, Samantha Seltzer) is transitioning to a build-your- own—Old Fashioned bar.
