Lucretia Sulimay’s Breakfast Sausage

Ingredients

  • 2½ pounds ground pork
  • 1 tablespoon plus 1 teaspoon poultry seasoning
  • 2 teaspoons chopped fresh rosemary
  • 1⅛ teaspoons cayenne pepper
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • ½ teaspoon ground nutmeg

Instructions

Preheat oven to 425°. Mix all ingredients gently, folding the mixture with your hands to keep the consistency loose. Allow mixture to sit for 20 minutes. Form into patties and bake at 425° for 20 minutes or until done.
