🍔 What’s a cemita? A cemita is an iconic sandwich from Puebla, Mexico. Traditionally, it is served on a sesame-seeded roll layered with quesillo (Oaxacan cheese), papalo, avocado, and a choice of filling. For the festival, however, participating restaurants are invited to put their own creative spin on the sandwich, drawing inspiration from their individual culinary backgrounds while honoring the traditions that make the Cemita so beloved.
