Celebrity chefs are just like us! They want major success, and they want it yesterday. Nicholas Elmi opened Laurel on the heels of winning the title of Top Chef on season 11 of Bravo’s widely viewed reality show. But when the restaurant debuted, the crew at Laurel made no assumptions about overnight success. They focused on the most important things in the biz: stellar food and service. Craig LaBan, the Philadelphia Inquirer’s influential restaurant critic, bestowed his coveted four-bell rating on Laurel in December of 2016, three years after the restaurant opened. “It’s not going to happen in a day,” says Elmi.
